Kathi’s One Pot Chili

From my friend, Kathi Murphy! Best chili I have ever had.

One Pot Chili Recipe
Servings: 10

Ingredients
- 1 pound ground meat beef, turkey or chicken – I use ground turkey – cannot tell the difference
- 1 1/2 tablespoons Olive Oil
- 3 tablespoons cloves chopped garlic (or more) minced garlic in a jar works too
- 2-4 diced jalapenos, serrano or hababero or ghost see notes
- ½ chopped onion optional
- 2-4 cups OPTIONAL baked sweet potatoes, cut in cubes OPTIONAL – also you can subsitute baked sweet potatoes for a 40 oz can of Bruce's Yams, drained, rinsed in cold water and cut in cubes
SPICES
- 2 tablespoons Chili Powder
- ½ teaspoon Paprika, Oregano, Cayenne Pepper, and Cumin. Tumeric Optional easy to prepare 1-3 servings of spices ahead
TOMATO INGREDIENTS
- 28 ounces Crushed Tomatoes, canned
- 19 ounces Red Enchilada Sauce, canned
- 10 ounces Rotel Diced tomatoes and Green Chilies, canned mild, spicey or hot to your liking
- 15 ounces Tomato Sauce – regular or fire roasted if you like spicy
- 6 ounces Tomato Paste optional – if you omit, use a little less water
BEANS AND CORN
- 16 ounces black beans, drained DRAINED- I use Bush's seasoned black beans
- 16 ounces kidney beans, drained
- 15 ounces sweet corn, drained drained – I use sweet kernel corn
Instructions
- Brown meat in large pot, drain
- Then add olive oil, garlic, jalapenos, onion, and1/3 cup water if using tomato paste–brown until soft
- ADD tomato based/liquid ingredients, mix well
- ADD spices and mix well
- Heat over medium heat for a few minutes, continue stirring ….. get it warmed up
- Then stir in the beans and corn….let it heat up
- Cover, reduce heat to low & let simmer for 30 minutes, stirring occasionally.
- Serve with shredded cheese, sour cream or greek nonfat yogurt plain, or tortilla chips
Notes
Capsaicin in Peppers
- Jalapeño: 2,500 – 10,000 SHU.
- Serrano: 10,000 – 25,000 SHU
- Habanero: 100,000 – 350,000 SHU
- Ghost Pepper (Bhut Jolokia): Over 1,000,000 SHU.
