One Pot Chili Recipe

Ingredients

  • 1 lb. ground meat beef, turkey or chicken
  • 3 or more cloves chopped garlic the garlic in a jar works too
  • 2-3 diced jalapenos
  • ½ chopped onion optional
  • 28 oz. crushed tomatoes
  • Can of enchilada sauce or more water – 1 ½ cup
  • 10 oz. can of Rotel – mild, spicey or hot to your liking
  • 1 can tomato paste optional – if you omit, use a little less water
  • 2 TB chili powder
  • ½ teaspoon: Paprika dried Oregano, Cayenne Pepper, Cumin, salt, black pepper
  • 16 oz. beans – drained kidney, chickpea, black
  • 1 can corn drained

Instructions

  • Brown meat in big pot, drain
  • Then add 1 ½ TB olive oil, garlic, jalapenos, onion, 1/3 cup water,..brown until soft
  • ADD tomato based/liquid ingredients, mix well
  • ADD spices and mix well
  • Heat over medium heat for a few minutes, continuestirring ….. get it warmed up
  • Then stir in the beans and corn….let it heat up
  • Cover, reduce heat to low & let simmer for 30 minutes, stirring occasionally.
  • Serve with shredded cheese, sour cream, tortilla chips
