One Pot Chili

One Pot Chili Recipe

Ingredients
- 1 lb. ground meat beef, turkey or chicken
- 3 or more cloves chopped garlic the garlic in a jar works too
- 2-3 diced jalapenos
- ½ chopped onion optional
- 28 oz. crushed tomatoes
- Can of enchilada sauce or more water – 1 ½ cup
- 10 oz. can of Rotel – mild, spicey or hot to your liking
- 1 can tomato paste optional – if you omit, use a little less water
- 2 TB chili powder
- ½ teaspoon: Paprika dried Oregano, Cayenne Pepper, Cumin, salt, black pepper
- 16 oz. beans – drained kidney, chickpea, black
- 1 can corn drained
Instructions
- Brown meat in big pot, drain
- Then add 1 ½ TB olive oil, garlic, jalapenos, onion, 1/3 cup water,..brown until soft
- ADD tomato based/liquid ingredients, mix well
- ADD spices and mix well
- Heat over medium heat for a few minutes, continuestirring ….. get it warmed up
- Then stir in the beans and corn….let it heat up
- Cover, reduce heat to low & let simmer for 30 minutes, stirring occasionally.
- Serve with shredded cheese, sour cream, tortilla chips
