Original Charleston She Crab Soup

Charleston, South Carolina, is famous for this soup! She crab soup is a rich and creamy seafood chowder that originated in the South Carolina Lowcountry.

This recipe is from the ‘Caterin Charleston’ cookbook, and is sooooo good.

Charleston She Crab Soup

  • 8-16 ounces crabmeat, (eggs included, if possible)
  • 1 small onion, (finely chopped)
  • 1 small stalk celery, (finely chopped)
  • 4 ounces butter
  • 2 tsp flour
  • 8 ounces cream
  • 16 ounces milk
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup Sherry wine (optional)
  1. Saute onion and celery in butter in bottom of large saucepan, until lightly browned.

  2. Add crabmeat and flour.

  3. Stir milk in gradually until thoroughly mixed.

  4. Add cream and cook over low heat for 30 minutes.

  5. Add Worcestershire sauce, Sherry, salt and pepper. Simmer gently for 15 minutes and serve.
