Original Charleston She Crab Soup

Charleston She Crab Soup

Ingredients

  • 8-16 ounces crabmeat, eggs included, if possible
  • 1 small onion, finely chopped
  • 1 small stalk celery, finely chopped
  • 4 ounces butter
  • 2 tsp flour
  • 8 ounces cream
  • 16 ounces milk
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup Sherry wine optional

Instructions

  • Saute onion and celery in butter in bottom of large saucepan, until lightly browned.
  • Add crabmeat and flour.
  • Stir milk in gradually until thoroughly mixed.
  • Add cream and cook over low heat for 30 minutes.
  • Add Worcestershire sauce, Sherry, salt and pepper. Simmer gently for 15 minutes and serve.
