8-16 ounces crabmeat, eggs included, if possible 1 small onion, finely chopped 1 small stalk celery, finely chopped 4 ounces butter 2 tsp flour 8 ounces cream 16 ounces milk 1 teaspoon Worcestershire sauce 1/4 cup Sherry wine optional
Saute onion and celery in butter in bottom of large saucepan, until lightly browned.
Add crabmeat and flour.
Stir milk in gradually until thoroughly mixed.
Add cream and cook over low heat for 30 minutes.
Add Worcestershire sauce, Sherry, salt and pepper. Simmer gently for 15 minutes and serve.
