Charleston, South Carolina, is famous for this soup!  She crab soup is a rich and creamy seafood chowder that originated in the South Carolina Lowcountry.
This recipe is from the ‘Caterin Charleston’ cookbook, and is sooooo good.

- 8-16 ounces crabmeat, eggs included, if possible
- 1 small onion, finely chopped
- 1 small stalk celery, finely chopped
- 4 ounces butter
- 2 tsp flour
- 8 ounces cream
- 16 ounces milk
- 1 teaspoon Worcestershire sauce
- 1/4 cup Sherry wine optional
- Saute onion and celery in butter in bottom of large saucepan, until lightly browned.   
- Add crabmeat and flour.  
- Stir milk in gradually until thoroughly mixed.  
- Add cream and cook over low heat for 30 minutes. 
- Add Worcestershire sauce, Sherry, salt and pepper.  Simmer gently for 15 minutes and serve.
