Charleston She Crab Soup

Ingredients

  • 1 pound crabmeat
  • 2 small onions finely chopped
  • 2 small stalk celery finely chopped
  • 8 ounces butter
  • 4 teaspoons flour
  • 1 pint cream
  • 2 pints milk
  • 1/3 cup Sherry wine
  • 2 teaspoons Worcestershire
  • Salt and pepper to taste

Instructions

  • Saute onion and cellery in butter in large saucepan,until lightly browned.
  • Add crabmeat and flour.
  • Stir milk in gradually until thoroughly mixed.
  • Add cream, cook over low heat for 30 minutes.
  • Add Worcestershire sauce, Sherry wine, salt and pepper.
  • Simmer gently for 15 minutes and serve.
