Charleston She Crab Soup

Charleston, South Carolina is famous for this soup.

  • 1 pound crabmeat
  • 2 small onions (finely chopped)
  • 2 small stalk celery (finely chopped)
  • 8 ounces butter
  • 4 teaspoons flour
  • 1 pint cream
  • 2 pints milk
  • 1/3 cup Sherry wine
  • 2 teaspoons Worcestershire
  • Salt and pepper to taste
  1. Saute onion and cellery in butter in large saucepan,until lightly browned.
  2. Add crabmeat and flour.
  3. Stir milk in gradually until thoroughly mixed.
  4. Add cream, cook over low heat for 30 minutes.
  5. Add Worcestershire sauce, Sherry wine, salt and pepper.
  6. Simmer gently for 15 minutes and serve.
