While attending the University of South Carolina, I worked for Dr. Philip W. Fairey, Jr. His daughter-in-law and my friend, Carolyn Muthig Fairey, now Carder, shared his recipe with me. It is sooooooooooooo good.
Wild Rice Chicken Casserole
- 1 Whole Chicken
- 2 Cans Cream of Mushroom Soup
- 1 Jar Sliced Mushrooms
- 1 Box Uncle Ben's Long Grain & Wild Rice Fast Cook
- 1 Pound Jimmy Dean Pork Sausage (hot if you like spicy)
- 1-2 Dashes Worcestershire Sauce
Cook whole chicken, debone and cut up in bite size pieces. save some broth so it is not too dry
Cook Uncle Ben's Long Grain & Wild Rice according to instructions on the box
Fry pork sausage and drain
Mix all together with 2 cans of cream of mushroom soup and 1-2 dashes of worcestershire.
Grease or spray baking dish with PAM.
Bake at 350 degrees for 30-40 minutes
