Dr. Fairey’s Wild Rice Chicken Casserole

While attending the University of South Carolina, I worked for Dr. Philip W. Fairey, Jr. His daughter-in-law and my friend, Carolyn Muthig Fairey, now Carder, shared his recipe with me. It is sooooooooooooo good.

Wild Rice Chicken Casserole

Course: Main Course

Ingredients

  • 1 Whole Chicken
  • 2 Cans Cream of Mushroom Soup
  • 1 Jar Sliced Mushrooms
  • 1 Box Uncle Ben's Long Grain & Wild Rice Fast Cook
  • 1 Pound Jimmy Dean Pork Sausage (hot if you like spicy)
  • 1-2 Dashes Worcestershire Sauce

Instructions

  • Cook whole chicken, debone and cut up in bite size pieces. save some broth so it is not too dry
  • Cook Uncle Ben's Long Grain & Wild Rice according to instructions on the box
  • Fry pork sausage and drain
  • Mix all together with 2 cans of cream of mushroom soup and 1-2 dashes of worcestershire.
  • Grease or spray baking dish with PAM.
  • Bake at 350 degrees for 30-40 minutes
