Dr. Fairey’s Wild Rice Chicken Casserole

While attending the University of South Carolina, I worked for Dr. Philip W. Fairey, Jr., and his daughter-in-law, Carolyn Muthig Fairey, gave me this recipe. It is sooooooooooooo good.

Wild Rice Chicken Casserole

  • 1 Whole Chicken
  • 2 Cans Cream of Mushroom Soup
  • 1 Jar Sliced Mushrooms
  • 1 Box Uncle Ben's Long Grain & Wild Rice Fast Cook
  • 1 Pound Pork Sausage ((hot if you like spicy))
  • 1-2 Dashes Worchestershire Sauce
  1. Cook whole chicken, debone and cut up in bite size pieces

  2. Cook Uncle Ben's Long Grain & Wild Rice according to instructions on the box

  3. Cook pork sausage and drain

  4. Mix all together and put in baking dish

  5. Bake at 350 degrees for 30-40 minutes
