Charleston She Crab Soup
Charleston, South Carolina is famous for this soup.
- 1 pound crabmeat
- 2 small onions (finely chopped)
- 2 small stalk celery (finely chopped)
- 8 ounces butter
- 4 teaspoons flour
- 1 pint cream
- 2 pints milk
- 1/3 cup Sherry wine
- 2 teaspoons Worcestershire
- Salt and pepper to taste
- Saute onion and cellery in butter in large saucepan,until lightly browned.
- Add crabmeat and flour.
- Stir milk in gradually until thoroughly mixed.
- Add cream, cook over low heat for 30 minutes.
- Add Worcestershire sauce, Sherry wine, salt and pepper.
- Simmer gently for 15 minutes and serve.
